Baked Sweet Potato Fries are Easy, Healthy and Crispy

Did you know that the darker the sweet potato the sweeter it is? Whether you call them yams or sweet potatoes, they are healthy for you. I can’t believe that I did not eat them for years. I shunned a lot of vegetables while I was young. It was all in the presentation. Growing up being made to eat vegetables was not good for me. Now, I eat baked sweet potatoes, zucchini, asparagus, baked green beans, carrots, and Brussels sprouts. A good recipe for sweet potato salad is going to be next.

Here is an easy way for you and your family to get your fix of sweet potatoes. Peel your sweet potato, cut in half, and then slice and cut into pieces that look like french fries. Put on a rack on a cookie sheet that lets the heat circulate around the fries. Bake at 425 degrees for 30-40 minutes. Serve in a bowl and drizzle extra-virgin olive oil over fries and sprinkle with pepper.

If you want an additional thrill for your taste buds, add a sauce to dip your fries. Since I am cooking for two, I usually have to adjust this recipe for the amount of dip that I need. Start off with this for one sweet potatoe and scale it to the amount of potatoes that you are fixing for your family.

3 heaping tablespoons of no-fat sour cream
1 tbs. of chile sauce (substitute chili powder if you do not have this)
1/2 tsp. cumin
pepper
1/2 tsp. cilantro
1/2 tsp. garlic powder or granulated garlic
1/2 tsp. of granulated onion

This will give you a great tasting dipping sauce just like they will serve you in the restaurants when you order the fries off of the menu.

You can also cook up a batch of baked sweet potato chips or medallions. Peel the sweet potato like above and cut them into thin medallions. Spread them on parchment paper laid out on a cookie sheet and drizzle with olive oil and seasoning.

Bake in oven at 475 degrees for 20-30 minutes, depending on how thin you cut the medallions. Turn chips half way through the process.

Keep an eye on them at the end. Pull them out before the edges start to turn crisp.
