Mary’s Oat Bran Muffins

I have been making these oat bran muffins for 15 years now. I was told by my doctor that my cholesterol was high and I needed to change my diet to help lower it. This recipe came from “The 8-Week Cholesterol Cure” book by Dr. Robert E Kowalski. Just like me, he also had high cholesterol and wanted to lower it by diet instead of drugs.

Oat bran contains soluble fiber which is found to reduce the bad LDL cholesterol while not lowering the good HDL. I have changed this recipe over the years to make it the best oat bran recipe to fit my taste. You can add nuts, raisins, or other dried fruit to the mix and they all taste good. These muffins are a delicious way to help you stay healthy and help lower your cholesterol. If you want another healthy whole grain, try the whole wheat bread recipe.

Ingredients:

1 1/8 c. oat bran cereal
1 1/8 c. whole wheat flour
1 Tbs. baking powder
1/2 tsp. salt
3/4 c. skim milk
2 egg whites, slightly beaten
1/3 c. molasses and honey mixed half and half
2 Tbs. canola oil
1/4 c. chopped nuts, raisins, or dried fruit (optional)

Directions:

Heat oven to 425 degrees. Combine the dry ingredients in a medium bowl. Add the liquids. Mix together with a spoon.
Put batter in a 12 cup muffin pan. Fill each cup 1/2 full.
Bake 12 min, or until done, golden brown on top.
Makes 1 doz. small muffins. Great for breakfast or with tea in the afternoon.
